Healthy Snack Alternatives

We want our families to consume healthier foods and avoid the highly processed, sugary, genetically modified foods, but how do we do it?


Preparing natural, homemade on-the-go food is surprisingly easy and fun. Here are four healthy snack options, perfect for school and traveling!

1. Energy Bar. This snack does not require a dehydrator, but does require a food processor. Ingredients include almonds and/or seeds, along with dried fruit.


I call my recipe "The Andy Bar" after my college nickname. You can easily adapt this recipe and choose your own brand name. Be creative and have fun labeling!

The next three snacks require the use of a dehydrator or makeshift dehydrator. Snacks that are dehydrated at temperatures below 116 remain raw. Raw foods maintain their enzymes and therefore are healthier foods.

Your oven makes an excellent dehydrator. Set the oven at its lowest temperature. (This will probably be somewhere around 170 degrees.) Prop open the oven door to help lower the drying temperature. Place a fan in front of the oven to keep the air flowing and avoid condensation.

2. Fruit Leather. Virtually any fruit and any fruit combination will work. This is one of the simplest snacks to make, provided you have a food processor and an oven or dehydrator. I ferment the fruit to lower the sugar content, and my kids still love it! Feel free to be creative with additions like cinnamon, ginger, and other natural ingredients.


3. Dried Fruit. Apples, bananas, and mangoes lend themselves well to this process. Simply slice and dehydrate using your oven or dehydrator. You can maintain the color of the fruit by dipping first in lemon juice. Or you can slice and sprinkle with cinnamon and dehydrate.


4. Chips. The Snack Food Association says that potato chips are America's number one snack. According to the trade group, tortilla chips rank as number two. There's no doubt we like salt and we like crunch. However, our love for convenience as well as the crunch may come with a price. When carbohydrate-rich foods like potatoes are cooked at high temperatures—as is the case with all potato chips—a chemical by-product is produced called acrylamide. The World Health Organization acknowledges that acrylamide is a carcinogen. (See their information note titled Acrylamide in Food is a Potential Health Hazard to learn more.)

The alternative? Potatoes can be safely dehydrated to preserve their nutrition and avoid acrylamides. Sweet potatoes can also be dehydrated and salted. However, for the most crunch and the least starch, try kale chips! Kale chips can be as simple as mixing oil and salt with freshly washed kale, or you can add flavor and nutrition by incorporating other greens, vegetables, or spices.


It's not easy to forsake the convenience of on-the-go snacks, but with a little creative energy you may find yourself enjoying familiar foods in a whole new way!

We did our best to keep our kids in school during the 2007-2008 school year, but their health was failing and their symptoms increasing. One by one we took them out of school as our health grew worse. Within a month of vacating our home in October 2008, we knew our kids needed medical help. We put their education on the back burner.

We relocated to Arizona to get that help, and as the reality of the detoxification process took hold, I let go of any attempt to homeschool my children. I couldn’t prepare a meal, let alone teach math.

I contacted our school district and requested help. We tested the children and tried some online classes. When we realized we'd be staying in the district, I requested a tutor. I based my request on a letter from our treating physician at the time, Dr. Michael Gray. (See this previous post.)

The school district was more than accommodating. We drew up 504 plans for each of our five school-age children. The district provided two homebound tutors over the course of the next two years. Our 15-year-old attended one class at the local high school, in addition to the tutoring. Our 17-year-old completed her GED last spring.

What about the younger kids? Were they ready to try school? Our 7th-grade daughter tried an after-school club at our local middle school in April and loved it. But within a few hours her nose began to bleed and continued for 24 hours.

The school was an old building and routinely sprayed with pesticides. Our kids weren’t ready.

I called the local charter school. They were voted “Greenest Grade School in America” in 2008. Most schools use pesticides. Would they be different? To my surprise, the school had not been sprayed. Even more surprising, the buildings were newer construction. I couldn’t believe it when I learned that the middle school had openings and the 5th grade had room for one child: a boy. Brandon, who had missed most of 1st and 2nd grade, was entering 5th grade.

I hung up the phone and burst into tears.

Could our lives be turning a corner? Had this aimless wandering not been aimless after all? Were we placed in the “middle of nowhere” only to discover that just down the road was a school that would breathe new life into our family?

Air quality would be the key to our children’s success. The school allowed us to have the buildings inspected for mold. There was no apparent water intrusion and no hint of mold. Thermal imagining showed no hidden moisture. The district agreed to purchase one air purifier for each of the three classrooms. (Based on our mold specialist’s recommendation, we chose the Austin Health Mate.)

The school administrator even added this request to parents in the back-to-school newsletter:

We have a new family at the school and they are HIGHLY sensitive to chemicals and smells. They have asked us to help their kids succeed in this environment by being very aware of hair products, lotions, and perfumes. If everyone can refrain from wearing products that are highly chemical and with a fragrance, it would be a huge benefit to these kids.



School started this last Monday. On Sunday night, I drew apples on our front porch, the resurrection of an old tradition. Every year on the first day of school, I would use red and green chalk to commemorate the kids’ passage into a new year. Their grade number would appear prominently in the middle. The resulting picture of each child standing in their apple told the story of new backpacks, favorite outfits, and ever-changing faces.

This year’s “apple pictures” marked more than a passage into a new school year. They marked the beginning of a new season. And while our journey is far from over, we're not where we once were. As the poem by Joseph Morris reminds us:
...we always think the load
May be greater than we've power to endure.
... For the climbing of a mountain takes but one step at a time...

As summer vacation winds down, school mold problems have been reported in several states across the country. The following four news stories demonstrate the increasing awareness of the importance of air quality in schools.


Mold to Delay Opening of Elementary School

GILLETT, Wis. (AP) -- An elementary school in eastern Wisconsin will have its start date pushed back after mold was found throughout the building.

School was scheduled to start Sept. 1 for the Gillett School District in Oconto County. But mold has taken hold in nearly every room.

The district says it was apparently caused by the humid summer. It's mainly on the carpeting and isn't believed to be airborne.

It was discovered last week just before summer school ended. There haven't been any reports of illnesses.

Secondary school principal Jeremy Pach tells WLUK-TV the district is working with the Department of Public Instruction to determine a start date.


Mold Delays Start of School

ROSSVILLE, Kansas -- A mold problem is causing one school in the Kaw Valley school district to delay its start date.

According to Superintendent Jim McDaniel, mold was discovered at the Rossville Junior and Senior High School building, and while clean up and restoration is continuing on getting rid of the mold, it means that school for those students won't start until August 26th.


Mold Found in More Iowa Schools

SPRINGVILLE, Iowa (AP) -- Mold has delayed the start of class in more Iowa schools.

Officials in Springville, near Cedar Rapids, say mold has been found in an elementary school. The mold was found on Thursday, and students were sent home early.

No classes were being held on Friday.

There was no immediate word from school officials on how bad the mold problem is and how long it would take to clean it up.

Mold has also delayed classes at West Branch Middle School in West Branch and at Regina Catholic Education Center in Iowa City.

Both schools postponed the start of classes from this week until Monday.


Mold Delays School for W.B. Students

WEST BRANCH, Iowa -- Students at West Branch Middle School have been getting a few more days of summer vacation this week after mold was found at the school, delaying the start of the new year.

Superintendent Craig Artist said the mold was found in a couple of classrooms earlier this week, but spread rapidly to other parts of the building as workers tried to clean it up. That prompted him and other district officials to delay the start of school, originally scheduled for Wednesday, until at least Monday, he said. Students at Hoover Elementary in West Branch and West Branch High started on schedule Wednesday, he said.

Artist said the mold is not toxic, but could cause problems for anyone with allergies or asthma. Teachers have remained on the job, either subbing in other district buildings or wearing masks and gloves as they work in the middle school, he said.

Mold, Asthma, and School Attendance

Environmental awareness can prove cost effective for school districts. Take San Antonio, Texas' North East Independent School District, for instance. Faced with state education funding cuts in 2005, Superintendent Richard Middleton set out to maximize revenue. He looked at the attendance rate. Increased attendance rate means increased money for the district. Middleton knew that if he could increase the number of kids coming to school every day by just 1 percent, NEISD would get an additional $3.4 million in funding.

What caused kids to miss two to three weeks (or more) of school each year? Asthma. What is one of asthma's contributing factors? Exposure to toxic mold. (A 2004 study conducted by an Institute of Medicine expert panel concluded that an association exists between damp buildings and upper respiratory tract symptoms, wheeze, cough, and exacerbation of chronic lung diseases such as asthma.)

In 2002, mold was discovered in three of NEISD’s elementary schools. The cause: a combination of flawed construction, contractor error and failure of maintenance to notice. “It became clear to me that the construction management and maintenance departments did not share the common goal of understanding environmental health,” recalls Middleton.

Ironically, the mold discovery was the first of three events Middleton calls “a positive perfect storm” toward NEISD’s wellness overhaul. From there, Middleton created a new Department of Environmental Health to oversee air quality issues and advocate and maintain a healthy environment for staff and students. He promoted Ron Clary, his first-in-command custodian, to executive director for facilities and maintenance to run that department. Says Middleton, “We then had departmental leadership that equally understood both their role and responsibility in building health.”

Clary’s department conducts classroom evaluations, removes mold on ceilings and handles teacher concerns regarding more absenteeism or respiratory-related issues among students. In 2008, the district was honored by the federal Environmental Protection Agency for implementing successful indoor air quality programs.

In 2006, Rhodes approached Middleton about state and nationwide data showing how asthma affects school attendance and shared ideas for how to combat the district’s condition. Middleton hired her that year as the district’s director of asthma education for the new department.

Under Rhodes’ guidance, communitywide “Asthma Blow-Outs” would inform parents and students about asthma and fostering wellness at home. School nurses, physical education teachers and asthma professionals ran those evening information sessions.

The effect of the Middleton-Clary-Rhodes trifecta of asthma prevention has been staggering. According to Rhodes, in early fall 2006, the number of inhalers used districtwide due to asthma during the first six weeks of school was more than 9,000. After implementing education outreach and classroom strategies, in early fall 2007 inhaler use dropped to 4,500.

Surprisingly, these changes and improvements haven’t increased NEISD’s overall budget. “We’re the ninth-largest district in the state,” Middleton says, “and of 100 districts in Texas, 97 spend more than we do on maintenance and custodial costs, yet we’re achieving excellent results.” In addition, Middleton says the district’s attendance-based revenue from the state has significantly increased.

School Environmental Policy

Imagine a school with a chemical-free, fragrance-free policy. One with a strong stand on the issue of water damage. One which makes the connection between a child's ability to learn and the indoor air environment. A school which forbids the use of toxic markers.

Sound implausible?

Several schools have emerged. One in Glendale, Arizona. Challenge Charter School is a K-6 school with the following environmental policy:

Chemicals and chemically-laden material will be considered toxic and not allowed or used on site until proven safe. Biological contaminants, such as bacteria and mold, will be considered hazardous and, therefore, abated. Indoor air quality, along with other environmental factors in and around the school, affects the health, performance and productivity of all occupants. Children are more susceptible to environmental hazards, and the biochemistry of each person is unique. Accordingly, the Environmental Health Policy must be inclusive to ensure the provision of an optimum school environment that is healthful for all occupants and conducive to the learning needs of all students.
  1. Pesticides and their use are prohibited on school premises. A system of integrated pest management shall be employed to monitor, prevent, suppress and eliminate pests without using any pesticides.
  2. Smoking of tobacco is prohibited on campus. Signs prohibiting smoking shall be placed at the main entrances of the school building.
  3. Cleaning and maintenance of the school and furnishings is to be done using safer, non-toxic products that are least odorous (e.g. baking soda, vinegar, Bon-Ami, borax, Basic H and I). A solution of water and up to 10% chlorine bleach may be used for disinfecting purposes.
  4. Use of aerosol sprays is prohibited inside the school.
  5. Soap, toilet paper and tissue must be fragrance-free. Use of conventional air fresheners and aromatic deodorizers is prohibited.
  6. All school and art supplies must be non-toxic and fragrance-free. No scented stickers, permanent markers, or other solvent-based products are to be brought or used on campus. Correction fluid may not be used in classrooms or other areas when students are present.
  7. Science experiments requiring chemicals, or using any odorous materials, shall be restricted to a designated area adequate exhaust ventilation. Alternatives for chemistry class and other lab activities will be made available upon parent request to any students with allergies and/or chemical sensitivities.
  8. Use of perfume, cologne and other scented personal products (e.g. hair care products, soaps, lotions, deodorants) is prohibited inside the school building. Signs to this effect shall be posted outside the entrance doors. Anyone wearing fragrance products is prohibited from entering the school beyond the front office reception area.
    • Any occupant who noticeably smells of fragrance, smoke or other chemical odors is to be sent to the front office reception area where appropriate action(s) will be taken to remedy the situation.
    • In the case of students, parents will be notified and summoned to school if a scented personal product must be removed from a child’s body. The student may not return to the classroom or regular education environment until the fragrance or chemical odor has been removed.
  9. Any questionable items are to be sent to the school office for assessment.
  10. The chemical composition of new furnishings, supplies (e.g. paints, adhesives, caulking compounds) and construction materials shall be carefully considered before purchases are made. Donated items must be carefully screened. Safe sealers may be applied on plywood and other furnishings to minimize the outgassing of chemicals (e.g. formaldehyde, organic hydrocarbons).
  11. To control the presence of chalk dust and minimize its accumulation, blackboards are to be cleaned only with a damp cloth while students are not present. Only white chalk may be used in classrooms. Blackboards and chalk may be replaced with white boards and odorless, water-based markers.
  12. When purchasing textbooks and other books, preference will be giving to those that have soy ink print on acid-free paper, and older, used books. If new and odorous, books can be spread open and baked at 100 degrees Fahrenheit for at least five hours and then aired out. This procedure helps diminish odors of ink and paper chemicals. Use photocopies, as opposed to dittos, whenever possible.
  13. Controlled ventilation with exhaust fans will be installed in all specially designated rooms that house printing, copying and lamination equipment.
  14. Routine vacuuming of the carpet shall be done either before or after regular school hours when classes are not in session. Until HEPA and/or Nilfisk GS 90 Allergy Vacuums can be acquired by the school, donated vacuuming equipment will have to be used and retrofitted with more efficient dust bags to best prevent the transferring of particulates into the air.
  15. The heating, ventilating, and air conditioning (HVAC) systems shall be properly maintained, serviced and upgraded in accordance with the Indoor Air Quality Management Plan. modifications will include retrofitting the systems with high efficient filters or comparable filtrations.
  16. Installation, use and maintenance of air purifiers shall be done according to the specifications described in the Air quality Management Plan.
  17. Educational programs for students, parents and staff will be provided so that the whole school community becomes more aware of environmentally-related health, behavioral and learning problems.
  18. In-service training of teachers will include instruction on:
    • how to recognize environmentally-related health, behavioral and learning problems in children;
    • identifying potential causes of environmentally triggered illness (ETI) in relation to symptoms and learning disabilities;
    • prevention and management of ETI, and accommodating the special needs of any affected individuals, using a multi-disciplinary team approach.

I have known for quite some time now that I cannot teach my children at home. I can facilitate their medical needs but cannot take on their education. For this reason I pursued help through the local school district.

This week our four youngest began school for the first time in nearly a year. They are being taught in our home by a gifted teacher provided by the district. We are so grateful and the kids are excited to be learning again. This is the letter our doctor wrote encouraging the homebound instructional program.

"This is to confirm that I am the attending, consulting, and treating physician for children in the Fabry family with regard to a series of problems associated with an unfortunate episode of residentially-related poisoning occurring as a result of their residence in a structure in Colorado that was damaged by water with resultant growth of bioaerosols in an amplified manner including toxigenic structural mold and their associated mycotoxins.

"As a result of a genetic susceptibility, the Fabry children are exquisitely sensitive to toxins associated with biological agents including a variety of bacteria and fungi and are intolerant of many volatile organic compounds, particularly aromatics, commonly found in public school environments. These things include, but are not limited to, cleaning agents containing phenol, pesticides of various sorts, and of course bioaerosols associated with water damaged materials and their associated mold and mycotoxin amplification. This confers to the Fabry children a prohibition on their being able to enter many public schools without experiencing adverse health effects.

"As a result of their inability to maintain their health when they are exposed to these environments and the fact that such exposures would have a direct impact on their cognitive functioning by impairing their cognitive performance, I am requesting that they be homeschooled in a chemically-mitigated environment, which their parents have facilitated.

"Assuming that they are not getting exposed to volatile organic compounds, toxins, and triggers to which they are reactive, they are fully capable of and should be engaged in full-time education, albeit primarily in a home environment.

"I do want to emphasize that any teachers that are attending to their education need to ensure that they do not wear fragrance personal hygiene products or clothing that has been laundered in fragrance laundry soaps or with fragrance fabric softeners. It is also contraindicated for these individuals to be smokers as they will carry the residue of sidestream smoke on their clothing."

A year ago I had only the Internet and my intuition telling me our mold exposure made my kids sick. I had doctors urging me to have my kids seen by a psychologist. You can imagine the relief when I ventured to Arizona to have them seen by a toxic mold specialist.

We continue to learn the hard way the extent of their limitations. I bought two composition books for the first day of school. Brandon had a nosebleed within the first hour.
