Pancake Recipe

We enjoyed some "green pancakes" last week for St. Patrick's Day. The recipe is as follows:

4 eggs
1 c. milk (we use kefir--can substitute coconut milk or milk of choice)
2 tsp. vanilla
Pinch of stevia
1/2 c. coconut flour (an excellent article on the benefits of coconut flour can be found here)
1 tsp. baking soda
1/2 tsp. sea salt
1 tsp. cinnamon
Coconut oil or ghee or butter for frying

Beat eggs in medium mixing bowl. Add milk or kefir along with vanilla, stevia, baking soda, sea salt, and cinnamon. Mix in coconut flour until all clumps are gone. (We added veggie/lime green juice for the holiday.) Fry in coconut oil/ghee/butter on griddle or skillet until browned on both sides. Keep pancakes small (3 inches diameter) and thick for best consistency. Total carb content of each pancake is less than 10 net carbs.

    It was really good but had an eggy flavor. The taste reminded me of french toast, so next time I would probably add cinnamon to the recipe so it would really taste like french toast.

    Thanks for the recipe- They look yummy! my daughter and I too are eating no grains or fruit, so new recipes are a true find.

    I also wanted to share with you the domino effect of your blog and the benefit of your willingness to "put it all out there". When my health went downhill (again) this fall after clawing through months of lyme treatment and heavy detoxing, I was pretty sure we had a mold issue. I came across your blog and read it from start to finish, then read "Mold Warriors". Everything clicked. While we've been working on remediation and addressing the health effects (HLA-DR shows both my daughter and I to be mold sensitive) I've relayed bits and pieces to my sister that lives out of state. Her family has been fighting lyme for 7 years and are still compromised in varying degrees. She is realizing that there may be a mold connection for them as well. She in turn has two friends with very significant health issues in their families, some of which mirror extremes you have mentioned about your children's conditions at times while living in your CO home. They both have major mold issues and didn't know that their health problems were related. They are now starting to realize this and it is giving them both hope and direction.     Thank you for taking the time to share this. I'm so glad to hear all of it. And thankful this has clicked for you. If you learn any lessons from the remediation process I'd love to hear.....so many people want to improve their air quality and don't know where to to start.

  4. Tried this for dinner tonight. It's a keeper. Next time I will quadruple the recipe so we have leftovers. Also used the Vitamix to blend and pour batter. Sooo easy!

    Will baking soda or baking powder aggravate candida/fungus?

  7. Thanks for the recipe! I tried making this tonight, but it was very crumbly and took forever to brown. It seemed like the inside didn't cook. What did I do wrong? I used So Delicious coconut milk (unsweetened), 4 eggs, 1/2c coconut flour, cinnamon, and a pinch of baking powder (I did not have baking soda but they still "fluffed" and bubbled). Why did they not turn out more firm, like pancakes usually do?

    They taste great though...they are just crumble with the slightest touch!

  8. From what I understand, you might need more baking powder if substituting. Try adding more powder and maybe a little less milk. It's trial and error for sure, my kids made these just recently and Brandon's was all crumbly and Colin's were perfect.

  10. I would go for the baking soda over the baking powder from what I have learned. Anti-candida is always controversial so it's worth some more research on it.

  11. Hi Andrea! Wonderful recipe! I wonder if I can substitute coconut flour from just a regular all purpose flour? Will it be ok? I find it hard to find that kind of flour in the nearest market.
